Arugula, Cherry, and Sunflower Seed Salad
MAKES 4 SERVINGS
Arugula Cherry and Sunflower Seed Salad
Ingredients:

Dressing

5 teaspoons Dijon mustard

2 tablespoons white wine vinegar

2 tablespoons olive oil

Salad

5 cups arugula, baby arugula, or baby spinach; cleaned and stems removed

1 medium unpeeled cucumber, chopped (about 1 cup)

10-ounce bag frozen unsweetened cherries, thawed and drained

2 tablespoons roasted, unsalted sunflower seeds

Directions:

In a small bowl, whisk together mustard and white wine vinegar. Slowly whisk in olive oil. Set aside until ready to use; you may need to rewhisk just before serving.

In a large bowl, combine arugula and cucumber. Add dressing and toss well to coat. Divide in equal portions among four plates. Top each salad with equal amounts drained cherries and 1 1/2 teaspoons sunflower seeds. Serve immediately.

Cherries in a savory salad not only provide an exciting flavor twist, but a recent study suggests that they may also help with rheumatoid arthritis symptoms. The dressing is quick and easy to make, and contains no preservatives-unlike most store-bought dressings.

  • Double or triple the dressing recipe and refrigerate it for up to a week to use for multiple meals. Just shake the dressing well before using.
