Dressing
5 teaspoons Dijon mustard
2 tablespoons white wine vinegar
2 tablespoons olive oil
Salad
5 cups arugula, baby arugula, or baby spinach; cleaned and stems removed
1 medium unpeeled cucumber, chopped (about 1 cup)
10-ounce bag frozen unsweetened cherries, thawed and drained
2 tablespoons roasted, unsalted sunflower seeds
In a small bowl, whisk together mustard and white wine vinegar. Slowly whisk in olive oil. Set aside until ready to use; you may need to rewhisk just before serving.
In a large bowl, combine arugula and cucumber. Add dressing and toss well to coat. Divide in equal portions among four plates. Top each salad with equal amounts drained cherries and 1 1/2 teaspoons sunflower seeds. Serve immediately.
