Cherry-Walnut Oatmeal Cookies

These tasty treats offer the richness of a traditional oatmeal cookie, but only contain a small amount of butter. Applesauce is the trick that makes these cookies taste decadent—they're sure to be a winner for your RA friendly diet. Dried cherries provide antioxidants and anti-inflammatory benefits, and walnuts are chock full of healthy omega-3 fatty acids, especially beneficial for those with RA.

  • Feeling well rested and extra-strong on a weekend afternoon? Make a second batch and save for another time when you're too busy to bake. Cookies can be stored in an airtight container and frozen for 4 to 6 weeks.
  • This versatile cookie recipe also works well with antioxidant-rich dried cranberries or dried blueberries.
Cherry-Walnut Oatmeal Cookies
Ingredients:

1 cup all-purpose flour

1/2 teaspoon baking powder

1/4 teaspoon baking soda

3 tablespoons unsalted butter, softened

3/4 cup brown sugar

1/4 cup unsweetened applesauce

1 large egg, beaten

2 cups old-fashioned or quick-cooking oats

3/4 cup dried unsweetened cherries

1/4 cup chopped walnuts

Directions:

Preheat oven to 350°F. Line two cookie sheets with parchment paper or aluminum foil.

In a small bowl, mix together flour, baking powder, and baking soda. Set aside.

In a medium bowl, using a hand or stand mixer, cream together butter and brown sugar until light and fluffy. Stir in applesauce and egg until combined. Add flour mixture and stir until combined. Stir in oats, cherries, and nuts.

Using a tablespoon, drop equal amounts batter on prepared cookie sheet, leaving about an inch of space between each cookie. Bake for 10 minutes, or until lightly browned on bottom. Allow to cool slightly before serving.
